Makes 40 pieces
  • 2 bananas
  • 30 pitted Medjool dates
  • 1/2 cup coconut oil
  • 2 cups shredded coconut

Chocolate Coating

  • 3/4 cup coconut oil
  • 3/4 cup honey
  • 3/4 cup cocoa powder
  • 3 tsp vanilla
  • dash of salt
  • pecans or walnuts – optional
  1. Add all of the filling ingredients together in a blender or food processor and pulse until mostly smooth*
  2. Flatten tablespoons of the filling  into 1/2 inch circles on a cookie sheet covered with parchment paper
  3. Put them in the freezer – the colder they are the less the chocolate will run off
  4. Use a double boiler or a small pot with a heat-safe bowl to melt and mix the chocolate ingredients together in
  5. After letting the filling freeze for a while, dip each piece into the chocolate and then put it back on the parchment paper and cold cookie sheet
  6. Optional: sprinkle with nuts and/or sea salt
  7. Freeze until chocolate has hardened
  • It can be helpful to  pulse the dates and oil first then add the other ingredients
  • If the filling isn’t really cold before the first dip in chocolate, it may run off. You can re-freeze and dip them into the chocolate bath again or drizzle the leftover chocolate onto each piece.
